Usync Migration combining fields - Help With Approach

I am converting a v8 site to a completely new v16 site so trying to get the data in the correct format using v13 as the interim step.
One set of 6 fields on a document type has been combined into a block list in the new version, but all of the migration examples i’ve seen convert a single property at a time and only have access to the its own data.
I believe i need to do a content level migration rather than field level conversion but cannot find any examples so wondering if anybody can point me in the right direction?

I thought ISyncMigrator was the answer but as far as i can see that is no longer available.
